Fluffy Vegan Vanilla Pancakes (No Eggs or Dairy)

These fluffy vegan vanilla pancakes are soft in the middle, lightly golden at the edges and made without eggs or dairy. Oat milk, vanilla and a splash of apple cider vinegar give the simple batter a tender lift, making this an easy breakfast for slow weekends or busy mornings.

Fluffy Vegan Vanilla Pancakes

Soft, fluffy vegan vanilla pancakes made with oat milk and no eggs or dairy. An easy breakfast with simple pantry ingredients.

Ingredients
  

  • 250 ml (1 cup + 1 tablespoon) Oat milk, room temperature
  • 2 tbsp Superfine granulated sugar
  • 2 tbsp Avocado oil (any neutral oil)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Apple cider vinegar
  • 210 g (1 ½ cup ) All-Purpose Flour
  • teaspoons Baking Powder
  • ¼ teaspoon Salt

Instructions
 

  • To a bowl, add oat milk and sugar. Whisk until sugar dissolves.
  • Add oil, vanilla extract and apple cider vinegar. Mix well.
  • Then, sift in flour, salt and baking powder.
  • Mix until dry flour is no longer visible. DO NOT OVER MIX (mix until dry and wet ingredients are just combined). Few small lumps are fine.
  • Heat pan on medium low heat. Then oil the pan.
  • Add about 1/4 cup of batter to the pan. Cook on low heat for 1-2 minutes on each side, until golden brown.
  • Serve with maple syrup and fruits.
