Fresh Creamy Lettuce Soup

A silky, creamy lettuce soup made in minutes with a Vitamix. Simple, fresh, and surprisingly delicious. A great way to use up lettuce before it wilts. Fresh Creamy Lettuce Soup | Vitamix

This creamy lettuce soup combines fresh lettuce with potatoes, onions and chicken stock. Blend the cooked vegetables, return the soup to the pot and finish with cooking cream for a smooth, green soup.
Dietary note: Contains dairy and chicken stock. This recipe is not vegan.

Ingredients
  

  • 5 Lettuce (Sucrine, Romaine)
  • 2 Medium Onions, minced
  • 2 Medium Potatoes, diced
  • 2 tbsp (30 g) Unsalted Butter
  • 3 cups (700 ml) Chicken Stock
  • 1 tsp (5 g) Salt
  • Pepper, to taste
  • 3/4 cup (200 ml) Cooking Cream 35%

Instructions
 

  • Wash the lettuce thoroughly. Chop the onions and peel and dice the potatoes.
  • Melt the butter in a pot over medium-high heat. Add the onions and cook for about 1 minute.
  • Add the chicken stock and potatoes. Bring to a boil and cook for 10 minutes, until the potatoes soften.
  • Add the lettuce and stir it into the hot stock until wilted. Transfer to a blender suitable for hot liquids and blend until smooth, following the blender's hot-liquid instructions.
  • Return the blended soup to the pot over medium-high heat. Add salt and pepper, stir in the cooking cream and bring back to a boil. Serve.

Notes

The video times the onion stage at about 1 minute and the potatoes at 10 minutes. Bringing the soup to a boil, wilting the lettuce, blending and reheating take additional time.
