Vegan Coconut Oatmeal Cookies

Eggless Dairy-Free Coconut Oatmeal Cookies

These Vegan Coconut Oatmeal Cookies have only 4 ingredients. They are easy to make and are delicious.

Ingredients
  

  • 1 ¼ cup (125 g) Desiccated Coconut (unsweetened) Finely shredded coconut
  • 3/4 cup (100 g) Ground Quick or Rolled Oat
  • 5 tbsp (75 ml) Oat Milk
  • 1/3 cup (80 ml) Maple Syrup

Instructions
 

  • Preheat oven to 350oF (180oC).
    Line baking sheet with parchment paper and set aside.
  • To a bowl, add maple syrup and oat milk. Whisk.
  • To same bowl, add desiccated coconut and oat. Mix well.
  • Form a small ball with the dough and then flatten it slightly. Place on baking tray.
    Repeat until all the dough is used.
  • Bake in preheated oven to 350oF (180oC), rack middle position, 15 minutes until golden brown.
  • Let cookies cool down on tray until they harden. Then transfer to cooling rack to cool down completely.
