Vegan Coconut Oatmeal Cookies
These vegan coconut oatmeal cookies are made with just 4 ingredients: desiccated coconut, ground oats, oat milk, and maple syrup. No eggs, no butter, no refined sugar, and no fuss. They bake up with a lightly chewy center and toasty coconut edges that smell incredible fresh from the oven. Eggless Dairy-Free Coconut Oatmeal Cookies
These Vegan Coconut Oatmeal Cookies have only 4 ingredients. They are easy to make and are delicious.
Ingredients
- 1 ¼ cup (125 g) Desiccated Coconut (unsweetened) Finely shredded coconut
- 3/4 cup (100 g) Ground Quick or Rolled Oat
- 5 tbsp (75 ml) Oat Milk
- 1/3 cup (80 ml) Maple Syrup
Instructions
- Preheat oven to 350oF (180oC).Line baking sheet with parchment paper and set aside.
- To a bowl, add maple syrup and oat milk. Whisk.
- To same bowl, add desiccated coconut and oat. Mix well.
- Form a small ball with the dough and then flatten it slightly. Place on baking tray.Repeat until all the dough is used.
- Bake in preheated oven to 350oF (180oC), rack middle position, 15 minutes until golden brown.
- Let cookies cool down on tray until they harden. Then transfer to cooling rack to cool down completely.
