Eggless Dairy-Free Coconut Oatmeal Cookies
These Vegan Coconut Oatmeal Cookies have only 4 ingredients. They are easy to make and are delicious.
- 1 ΒΌ cup (125 g) Desiccated Coconut (unsweetened) Finely shredded coconut
- 3/4 cup (100 g) Ground Quick or Rolled Oat
- 5 tbsp (75 ml) Oat Milk
- 1/3 cup (80 ml) Maple Syrup
Preheat oven to 350oF (180oC).Line baking sheet with parchment paper and set aside. To a bowl, add maple syrup and oat milk. Whisk.
To same bowl, add desiccated coconut and oat. Mix well.
Form a small ball with the dough and then flatten it slightly. Place on baking tray.Repeat until all the dough is used. Bake in preheated oven to 350oF (180oC), rack middle position, 15 minutes until golden brown.
Let cookies cool down on tray until they harden. Then transfer to cooling rack to cool down completely.
