Microwave Carrot Mug Cake
This microwave carrot mug cake is warm, spiced, and wonderfully moist with grated fresh carrot, chopped dates, and almonds baked right in. Made in minutes in a mug with no eggs required. Topped with a simple cream cheese frosting, it has all the flavors of a proper carrot cake in an instant, single-serving form. - 4 tbsp (30 g) All-Purpose Flour
- 2 tbsp (30 g) Granulated Sugar
- 1/4 tsp (1 g) Baking Soda
- 1/4 tsp (1 g) Cinnamon Powder
- 1/8 tsp (1 pinch) Salt
- 1 tbsp (15 ml) Vegetable Oil
- 4 tbsp (60 ml) Milk
- 1 tsp (5 ml) Lemon Juice
- 3 tbsp (20 g) Grated Carrot
- 1 Date, chopped
- 5 Almond, chopped
Cream Cheese Frosting
- 1 tbsp (15 g) Cream Cheese
- 1/2 tsp (3 ml) Vanilla Extract
