Spotty bananas on the counter? Turn them into this 5-ingredient vegan banana bread. Ripe bananas, sugar, oil, flour and baking powder are all you need, with no eggs, dairy or egg replacer.

This simple homemade loaf is an easy option for breakfast or an afternoon snack.

5-ingredient vegan banana bread

This easy 5-ingredient vegan banana bread uses ripe bananas, sugar, oil, flour and baking powder. No eggs or dairy needed. Slice it for breakfast or enjoy it with your afternoon tea.

Ingredients
  

  • 300 g (2 ½) Very ripe bananas
  • 80 g (⅓ cup + 1 tablespoon) Superfine granulated sugar
  • 60 ml (¼ cup) Avocado oil (any neutral oil)
  • 200 g (1½ cup) All-purpose flour
  • 2 teaspoons Baking powder

Instructions
 

  • Heat the oven to 350oF (180oC). Oil and line the loaf tin ( 8 × 4 inches – 20 × 10 cm) with parchment paper.
  • Mash the bananas until smooth. Stir in the sugar and mix until sugar dissolves.
  • Add in the oil and mix.
  • Add flour and baking powder. Mix just until no dry flour remains. Do not overmix. Don’t beat the batter.
  • Transfer batter into the tin and level the top.
  • Bake for 35-40 minutes. It’s ready when a skewer inserted into the center comes out without wet batter. If the top browns too quickly, loosely cover with foil.
  • Cool in the tin for 15 minutes, then lift onto a wire rack. Let cool completely before slicing to avoid a gummy center.

Notes

For the best result: use heavily spotted bananas.
Store airtight for 2 days in a cool room, or refrigerate for up to 5 days.
