4-Ingredient Vegan Banana Oat Cookies

These 4-ingredient vegan banana oat cookies are soft and chewy, with visible oat flakes and chocolate chips in every bite. Ripe bananas bring sweetness, while peanut butter holds the mixture together and adds a nutty flavour. No flour, eggs or dairy needed when you choose vegan chocolate chips.

Soft, chewy banana oat cookies made with ripe bananas, rolled oats, peanut butter and chocolate chips. Use dairy-free vegan chocolate chips; for a gluten-free batch, choose certified gluten-free oats and check the other ingredient labels.

Ingredients
  

  • 2 ripe bananas (about 1 cup mashed)
  • 120 g (1½ cups) rolled oats (certified gluten-free oats if required)
  • 60 g (¼ cup) peanut butter
  • 50 g (about ⅓ cup) chocolate chips

Instructions
 

  • Heat oven to 350°F (180°C) and line a tray with baking paper.
  • Mash the bananas until smooth.
  • Mix in the peanut butter, then stir in the oats and chocolate chips.
  • Scoop onto the tray and flatten each cookie slightly. They will not spread much.
  • Bake for 13 to 15 minutes at 350°F (180°C).
  • Let cookies rest on tray for 10 minutes before moving to rack to cool completely.

Can you make these cookies gluten-free?

Yes: use certified gluten-free rolled oats and check that your peanut butter and vegan chocolate chips are also gluten-free. Ordinary oats may come into contact with wheat, barley or rye during processing, so a flourless recipe is not automatically gluten-free.

What texture should you expect?

These are soft banana oat cookies, not crisp biscuits. Flatten each portion before baking because the mixture will not spread much.
