Christmas Red Velvet Sugar Cookies

These Christmas red velvet sugar cookies are soft, beautifully deep red, and have that unmistakable cocoa-kissed flavor that makes red velvet so special. Made with butter, egg, and a touch of red food coloring, they bake up soft and chewy with slightly crisp edges. Great for decorating with icing or eating plain straight from the cookie jar. Ingredients
  

  • 1/2 cup (125 g) unsalted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1 large egg
  • 1/8 tsp (1 g) salt (a pinch)
  • 1 tsp (5 ml) red food coloring gel (Americolor)
  • 1 tsp (5 ml) vanilla extract
  • 1 ½ cup (210 g) All-Purpose Flour
  • 1 tbsp (7 g) Cocoa Powder

Instructions
 

  • Beat the room-temperature butter and sugar on medium speed until pale yellow and fluffy. Beat in the egg.
  • Mix in the salt, red food-colouring gel and vanilla. Sift in the flour and cocoa and mix until the dough comes together.
  • Transfer to a work surface and roll to about 1/4 inch (0.6 cm) thick. Cut into shapes and transfer to a parchment-lined baking tray.
  • Bake on the middle rack of a preheated oven at 325°F (160°C) for 12–15 minutes. Let cool completely before adding any optional icing decoration.
