Microwave Cheesecake Recipe (Single Serve)
This single-serve microwave cheesecake is ready in minutes and wonderfully creamy and rich. A digestive biscuit or graham cracker crust, a smooth cream cheese filling with vanilla and a touch of milk, and it sets beautifully in the microwave in just a couple of minutes. Microwave Cheesecake Recipe – Mini Cheesecake – No Gelatin – No Bake Cheesecake
Are you craving Cheesecake, but don't want to eat a whole cake or you don't have time to bake one, this single-serve mini cheesecake is for you ! You can make this easy recipe in just a few minutes !

Ingredients
- 1 tbsp (14 g) Unsalted Butter
- 3 Digestive Biscuits (Oreo cookies or Graham Crackers)
- 1/2 cup (112 g) Cream Cheese
- 2 tbsp (30 g) Granulated Sugar
- 1 tbsp (15 ml) Milk
- 1 tsp (5 ml) Vanilla Extract
- Jam optional, for serving
Instructions
- Melt the butter in a microwave-safe 9 cm (3.5 inch), 180 ml ramekin. Swirl to coat the sides.
- Crush the digestive biscuits into fine crumbs, mix with the melted butter and press firmly into the bottom of the ramekin.
- Mix the cream cheese, sugar, milk and vanilla. Spoon onto the biscuit crust and spread evenly.
- Set the microwave to 600 W. Cook for three separate 45-second intervals, checking and pausing after each interval to prevent overflowing. The total cooking time is 2 minutes 15 seconds.
- Place in the freezer for 1 hour. Unmould when set and serve with jam if desired.
