Banana Fritters

These banana fritters are golden, crispy, and incredibly satisfying. Ripe bananas are coated in a simple batter of flour, coconut, sugar, and baking soda, then fried until perfectly crunchy on the outside and soft and sweet inside. A popular street food treat that comes together in just minutes. Serve warm as a snack, dessert, or a sweet side dish. Banana fritters are delicious as snacks or appetizers. They are crispy on the outside and soft inside.

Ingredients
  

  • 2 Bananas, Large, Ripe
  • 1 tbsp (15 ml) Lemon Juice
  • 2 tbsp (30 g) Granulated White Sugar
  • 1/2 cup All-Purpose Flour
  • 2 tbsp Unsweetened Desiccated Coconut
  • 1/4 tsp (1 g) Baking Soda
  • 1 pinch Salt
  • Vegetable oil for deep-frying

Instructions
 

  • Mash the bananas with a fork. Stir in the lemon juice and granulated sugar.
  • Sift in the flour, then add the desiccated coconut, baking soda and salt. Mix into a batter.
  • Heat vegetable oil for deep-frying over low heat, as shown in the video. Use two spoons to lower small portions of batter into the oil without overcrowding the pan.
  • Fry for about 4–5 minutes per batch, turning when the underside is golden, until golden on both sides. Drain on paper towels and repeat with the remaining batter.
