Vegan Chocolate Cupcakes in microwave
These vegan chocolate cupcakes are made entirely in the microwave in under 5 minutes. Egg Free Dairy Free Chocolate Cupcakes
These VEGAN CHOCOLATE CUPCAKES are super moist and so easy to make. No oven needed ! Microwave them for less than 5 minutes and you have perfect Egg Free Dairy Free Chocolate Cupcakes, for breakfast or afternoon snacks.
Ingredients
- 1 cup (200 g) Superfine Granulated Sugar
- 1 cup (240 ml) Water, room temperature
- 1/3 cup (80 ml) Vegetable Oil
- 1 ½ cup (210 g) All-Purpose Flour
- 1/4 cup (25 g) Cocoa Powder
- 1 tbsp (12 g) Baking Powder
- 1/4 cup (25 g) Cocoa Powder
Instructions
- Line a standard 12 cups silicone cupcake pan with paper liners. Set aside.
- To a bowl, add sugar, water and oil. Whisk until sugar is completely dissolved.
- Sift in flour, cocoa powder and baking powder.
- Mix until dry flour is no longer visible. DO NOT OVER MIX (mix until dry and wet ingredients are just combined).
- Spoon batter into cupcake liner until 2/3 full.
- Microwave for 4 minutes, power 1200 watts. Check if done with toothpick inserted in the middle.If not, add 10 seconds each time until done (4minutes, 30 seconds total)Please do not overcook or cupcakes will be hard. Please note that all microwaves are not the same. Adjust cooking time according to power of your microwave.
- Transfer cupcakes to wire rack to cool down completely.
