4-Ingredient Vegan Apple Oat Cups
These 4-ingredient vegan apple oat cups tuck soft apple pieces inside a peanut butter oat crust, with a crumbly topping made from the same mixture. Maple syrup adds sweetness, and everything bakes in a muffin tin. No pastry to roll out, and no eggs or dairy.

4-Ingredient Vegan Apple Oat Cups
Soft apple pieces fill these little peanut butter oat cups, finished with a crumbly oat topping. Made with just apples, quick oats, smooth peanut butter and maple syrup, this six-cup recipe needs no pastry, eggs or dairy.
Ingredients
- 200 g (about 1½ cup) 1 apple, diced finely
- 130 g (½ cup) smooth peanut butter
- 60 ml (4 tablespoons) maple syrup
- 120 g (about 1½ cups) quick oats
Instructions
- Heat the oven to 350°F (180°C). Use a silicone muffin tin or line 6 wells with parchment liners.
- Mix the peanut butter and maple syrup, then stir in the oats. The mixture should hold together when pressed. Reserve 2 tablespoons for topping.
- Divide the remainder between the wells, pressing firmly over the bottoms and partway up the sides to form shallow cups.
- Dice the apple into small 5 mm pieces. Microwave for 2–3 minutes, stirring halfway, until beginning to soften. Drain any pooled juice and let cool briefly.
- Divide the apple between the cups. Top the reserved oat mixture over the tops and press gently so it adheres.
- Bake for 18–20 minutes, until the edges are golden and the oat mixture looks set.
- Let the cups cool down completely, before unmolding.The cups are fragile while hot.
