Microwave Coffee Mug Cake
This microwave coffee mug cake is warm, fragrant, and full of real coffee flavor. Made with an egg, milk, instant coffee, and a splash of oil, it bakes up soft and moist in just a few minutes. How to Make Coffee Mug Cake in Microwave
Dietary note: Contains eggs and dairy. This recipe is not vegan.
Ingredients
- 1 Egg
- 1/4 cup (60 ml) Milk
- 1/4 cup (60 ml) Vegetable oil
- 1/2 cup (70 g) All-Purpose Flour
- 2 tsp (4 g) Instant Coffee
- 1 tsp (5 g) Baking Powder
- 1/4 cup (50 g) Granulated sugar
- Powdered sugar optional, for dusting
Instructions
- In a microwave-safe mug, whisk the egg with the granulated sugar until the sugar dissolves.
- Add the milk and vegetable oil and whisk until combined.
- Mix in the flour in two additions. Add the baking powder and instant coffee and whisk until combined.
- Microwave for 1 minute 30 seconds at 960 W. In the video, this is power level P8 on a 1200 W microwave. Adjust cooking time to suit your microwave.
- Check the centre with a toothpick; it should come out clean. Finish with a dusting of powdered sugar if desired.
