Spinach Cheese Puffs

These spinach and feta puff pastry puffs are flaky, golden, and packed with a savory filling of sauteed spinach, crumbled feta, fresh parsley, and seasoning. The puff pastry bakes up beautifully for a gorgeous, crispy shell with a fragrant, cheesy filling inside. Perfect as an appetizer, party snack, or a light lunch with salad. Spinach Cheese Puffs

How to make spinach and feta puff pastry.
This quick and easy spinach pie makes a great appetizer !
Course Appetizer, Snack

Ingredients
  

  • ½ Onion, Large, chopped
  • 12 oz (350 g) Baby Spinach
  • 9 oz (250 g) Feta Cheese
  • Salt and Pepper, to taste
  • ½ cup Parsley, Chopped
  • 9 x 9 inch (23 x 23 cm) Puff Pastry (store-bought)
  • 1 egg (for egg wash)

Instructions
 

  • Preheat oven to 400oF (200oC).
    Line a baking tray with parchment paper and set aside.
  • Heat 2 tbsp of olive oil in a pan over medium heat.
    Add chopped onion and sauté over medium heat until translucent.
    Then add spinach and cook for about 5-6 minutes, until wilted.
  • Using a strainer, remove excess moisture from spinach.
    Then transfer spinach to a bowl.
    Add chopped parsley, salt and pepper. Using your hands, break feta cheese into small pieces and add to bowl. Mix until combined.
  • Place puff pastry on a well-floured surface.
    Cut into 4 squares (4.5 x 4.5 inch / 11.5 x 11.5 cm).
  • Brush each squares with melted butter.
    Add about 1 ½ tbsp of feta filling in the middle of each square.
    Fold each square into a triangle and press edge firmly with fingers to seal.
    Then use a tines of a fork to seal the edge, so that it does not open during baking.
  • Transfer cheese puffs to a baking tray lined with parchment paper.
    Then, brush cheese puffs with egg wash (1 egg + 1 tbsp water/milk, mix well).
    With a knife, cut 2 slits on each cheese puff.
  • Bake in preheated oven at 400oF (200oC) for 25-30 minutes.
  • Allow to cool for 10 minutes on wire rack.
