This Earl Grey tea yogurt cake is incredibly moist, lightly fragrant with bergamot, and has a lovely tang from whole-milk yogurt. Adapted from a Bon Appetit recipe by Molly Baz, it uses loose-leaf Earl Grey steeped right into the batter for a subtle, aromatic flavor that is sophisticated without being overwhelming. - 1 cup (245 g) Plain Whole-Milk Yogurt
- 2 tsp (10 ml) Vanilla Extract
- 3 tbsp (15 g) Earl Grey Tea, loose-leaf or 1/4 cup from tea bags
- 2 cups (250 g) All-Purpose Flour
- 1 tsp (7 g) Salt
- 1/2 tsp (5 g) Baking Powder
- 1/2 tsp (5 g) Baking Soda
- 3/4 cup (180 ml) Cooking Oil
- 1 tbsp (12 g) Brown Sugar
