Earl Grey Tea Yogurt Cake

Ingredients
- 1 ¼ cups (250 g) Granulated Sugar
- 2 Eggs, large
- 1 cup (245 g) Plain Whole-Milk Yogurt
- 2 tsp (10 ml) Vanilla Extract
- 3 tbsp (15 g) Earl Grey Tea, loose-leaf or 1/4 cup from tea bags
- 2 cups (250 g) All-Purpose Flour
- 1 tsp (7 g) Salt
- 1/2 tsp (2 g) Baking Powder
- 1/2 tsp (2 g) Baking Soda
- 3/4 cup (180 ml) Cooking Oil
- 1 tbsp (12 g) Brown Sugar
Instructions
- Preheat the oven to 325°F (160°C). Lightly grease a 9 × 5-inch (23 × 13 cm) loaf pan and line it with parchment.
- Whisk the granulated sugar and eggs for about 1 minute until pale yellow. Whisk in the yogurt, vanilla and Earl Grey tea.
- Sift in the flour, salt, baking powder and baking soda. Mix together, then gradually add the oil while stirring constantly until combined.
- Pour into the prepared pan and tap it gently to release air bubbles. Sprinkle the brown sugar over the top.
- Bake for about 1 hour, or until a toothpick inserted in the centre comes out clean.
- Cool in the pan for 15 minutes, then remove and transfer to a wire rack.
