Instructions
Preheat oven to 400oF (200oC). Line a baking tray with parchment paper and set aside.
Heat 2 tbsp of olive oil in a pan over medium heat. Add chopped onion and sauté over medium heat until translucent.Then add spinach and cook for about 5-6 minutes, until wilted.
Using a strainer, remove excess moisture from spinach. Then transfer spinach to a bowl.Add chopped parsley, salt and pepper. Using your hands, break feta cheese into small pieces and add to bowl. Mix until combined.
Place puff pastry on a well-floured surface.Cut into 4 squares (4.5 x 4.5 inch / 11.5 x 11.5 cm).
Brush each squares with melted butter.Add about 1 ½ tbsp of feta filling in the middle of each square.Fold each square into a triangle and press edge firmly with fingers to seal.Then use a tines of a fork to seal the edge, so that it does not open during baking.
Transfer cheese puffs to a baking tray lined with parchment paper.Then, brush cheese puffs with egg wash (1 egg + 1 tbsp water/milk, mix well).With a knife, cut 2 slits on each cheese puff.
Bake in preheated oven at 400oF (200oC) for 25-30 minutes.
